French cuisine meets Japanese soulfood: “Taitanmen-Senmonten Koishidai”

“Taitanmen-Senmonten Koishidai” offers a rare type of ramen. It’s a mixture of sea bream soup and tantan noodles (= spicy noodles with minced meat). Created by a French chef, “Taitanmen” noodles is a gem that combines French techniques with Japanese ingredients. The rich soup made with sea bream and konbu seaweed is super creamy, rich in umami flavors, and has a very mellow taste.

The silky noodles are topped with minced meat, vegetables, bamboo shoots, fried potatoes, and roasted pork and chicken fillet with balsamic vinegar.

This sea bream rice is part of the “ramen set” during lunchtime.

Be sure to order “taimeshi“, or “sea bream rice” as a side dish. At lunchtime, there is also a ramen set option that already includes the “taimeshi”. Eat the taimeshi rice on its own, or pour the leftover ramen soup over the rice and make a risotto!
